50 – 57 grams or your favorite Little Goat filter roasted coffee
780 grams hot water (94°C)
BREW TIME
4-5 Minutes (varies to personal taste)
GRIND
Medium
Grind your beans to about as fine as caster sugar
CHEMEX METHOD
- Place filter in Chemex and fill pouring kettle with hot water. Rinse filter until the glass is heated. Discard water from both
- Weigh coffee to your preferred strength (50-57 grams) and then grind
- Place the Chemex on the scale, add your ground coffee, shake to level the coffee bed, zero your scale
- Fill your pouring kettle with hot water
- Start timer and pour 260 grams of water in 30 seconds. Start in the center and work your way out in concentric circles
- At 1 minute, pour to 520 grams of water in 30 seconds
- At 2.30 minutes, pour to 780 grams of water in 30 seconds
- Coffee should drain at around 3.30-4.00 minutes. Remove and serve
